Turn the heat up to medium-high and gradually add the reserved 1 cup of sugar. Whip for 5-6 minutes, or until soft peaks form. Add the vanilla extract and beat until barely combined.


  • Using a fine mesh strainer, carefully sift the flour mixture into the egg white mixture in three additions, gently mixing with a rubber spatula after each. Do not add the flour mixture simultaneously to avoid deflating or producing a dense cake. Sift and slowly fold in multiple additions. This is very important. Pour and spread the batter in an ungreased 9 or 10-inch tube pan. Shimmy the pan across the counter to level off the surface.

  • Bake the cake for approximately 40-45 minutes, or until a toothpick inserted comes out clean. Rotate the pan halfway during baking. During the baking process, the cake will rise significantly. After removing it from the oven, let the cake cool fully upside down on a wire rack for about 3 hours. (Upside-down, so the bottom of the tube pan is right-side up; see photo and video above.) Once cold, run a thin knife along the edges and gently tap the pan on the counter to release the cake.


  • If needed, sprinkle with confectioner's sugar. Cut the cake with a sharp serrated knife. Regular knives will readily squish the cake. Serve topped with the whipping cream and juicy berries.
